Craig,
great ideas and information.
I have set up Facebook and twiiter services for our bar/restaurant, and we are also in the process of setting up Foursquare. Twitter is a great way to communicate with local businesses and indivuals pre event, and then direct people to facebook post event for feedback, pictures etc. we also try to encourage people to hashtag us, and try to create some local trends on twitter.
We will also be using foursqaure to offer our mayor specials deal etc, as well as offers for different badges obtained here.
the key to alot of this is letting people know that you have twitter and facebook accounts, which is where the website really helps out. it needs alot of updating, and suffers if you neglect, but is defintely worth while.

Crfowd Tagging

Take group pictures of the bar and hand out "Tag You're It" cards with instructions.

The trick is to get everybody in that large photo tagged on a single Facebook image. Once the entire group has been tagged on the Bar's Fan Page, they all receive a free drink on their next visit.

This drives return visits, e-mail/facebook harvesting and drives Fans of the Bar.

Craig,

As always you are a creative idea generating machine – excellent post!

Motivated by the future admiration that would surly bestow me should I bring home a bottle of 22 year old scotch...but more so by my constant desire to help Edinburgh businesses utilize social media , I submit an idea for a Facebook Campaign for bars, pubs, hotels and bartenders:

Night Out Photography Competition

On your Facebook page allow others to post pictures after their night out to your fan page and have staff choose the best night out of the week every Monday. Ensure in the competition rules that they add the date of the night out, tag at least one person in the picture, add a clever caption and a link back to your website and post it to their profile. This means as the pictures get loaded up you get free advertising all over Facbook.

Then once a week get your staff to pick the best night out and award them with a voucher or a round of drinks for 10 of their friends plus free entry (if applicable) - make sure you specify that the voucher must be used within the next 3 weeks. By doing this you are ensuring that the winners are quickly on the phone organising the next night out due to the strict expiry date.

Get your Facebook fans to help you name the competition.

After a few weeks you could start making a few challenges for the picture competition, such as "This week you must have at least one member of staff in your picture submission" or "This week you have to show us who you thought was the hottest guy/girl you saw all night".

Dedicate a tab on your Facebook page to the competition with full rules. Make sure you communicate and celebrate winners every Monday (or whenever you decide) as promised. As Craig mentioned use Email marketing and each week send a note of the that week's winning night out and remind people how they can enter. Your social media links should feature in all your email marketing campaigns. But make sure your Bartenders, Staff, DJ's and Bouncers are all talking to customers about it - everyone has a part to play in helping with marketing!

You could easily have sub-categories of winning picture like best/worst "Drunken shot of the Week".

If the competition gets really popular make sure you write a press release about the innovation your business has used to engage with customers through social media.

Wishing you all every success!

Great read full of nice practical tips. I've always thought a bar could use twitter to crowdsource a new cocktail, drinkers tweet the mixologist when they are at the venue and he makes it up for them to try. If they like it they buy if not they dont. Could create a nice buzz and although there is the cost of the booze, these models of 'dont like dont pay' do work and it has been found that peoples honesty shines through more than you would think.
